It is not that I don’t trust professionals—on the contrary, I admire them—but they diminish the truth being at the service of an unreal beauty, frustrating the cook we all have inside, who could never reproduce such high expressions. Styling, touch-ups, add-ups, deceptions, inedible dishes—exactly the opposite of what you will find here: after taking a photograph, I come at it with a knife. I eat it. We eat it. For that act is part of our daily lives. I cook, I take the picture, I eat. This book is only possible that way, with a curious craftwork through the notary smartphone.
